
Another Successful Redbreast ‘Quite the Find’ Whiskey Dining Experience at Pichet

An Evening of Irish Whiskey & Exceptional Dining
On Saturday 12th July, Pichet welcomed guests for an exclusive evening in partnership with Redbreast Irish Whiskey. “Quite the Find” brought together one of Ireland’s most celebrated whiskey brands with Pichet’s seasonal sensations for a guided whiskey tasting and five course paired dining experience.
Throughout the evening, guests were led through the Redbreast range by a whiskey expert, discovering the history, production and unique character behind each bottle. From the iconic Redbreast 12 Year Old to the richly indulgent Redbreast PX Edition, every whiskey was thoughtfully paired with a dish designed by Head Chef Harry Quinn and his team to highlight the complexity and flavour of each pour.

Welcome Drink

Course 1 – Harissa Spiced Lamb Shoulder Croquette
Grilled Courgette, Whipped Bluebell Falls Goats Cheese, Anchoïade, Preserved Lemon
Paired with Redbreast 12 Year Old
The evening opened with a Harissa Spiced Lamb Shoulder Croquette, crisp on the outside and rich with slow-cooked lamb. Whipped Bluebell Falls goat’s cheese brought freshness and acidity, while preserved lemon and anchoïade added brightness and depth to the plate. Paired with Redbreast 12 Year Old, the whiskey’s signature notes of dried fruit, toasted oak and warming spice complemented the richness of the lamb while balancing the citrus and creamy elements of the dish. It was an elegant introduction to the evening and immediately showcased the versatility of Irish whiskey alongside food.

Course 2 – Salad of Lobster & Heirloom Tomato
Charentais Melon, Pickled Jalapeño, Smoked Tomato Dressing, Fresh Herbs
Paired with Redbreast Lustau Edition
The second course brought a lighter, summery balance. Sweet lobster and heirloom tomatoes were paired with fragrant Charentais melon, fresh herbs and a subtle kick from pickled jalapeño, while smoked tomato dressing added richness. The Redbreast Lustau Edition, finished in Oloroso sherry casks, layered dried fruit, toasted nuts and gentle sweetness over the dish, complementing the natural sweetness of the lobster while enhancing the smoky and herbaceous flavours.

Course 3 – Knockanore Cheese Agnolotti
Peas, Broad Beans, Girolles
Paired with Redbreast 18 Year Old
The handmade agnolotti provided a comforting centrepiece to the menu. Filled with Knockanore cheese and served alongside peas, broad beans and seasonal girolles, the dish celebrated Irish produce at its peak. Redbreast 18 Year Old brought remarkable depth, with orchard fruit, spice and oak notes adding another layer of richness while allowing the freshness of the vegetables to shine through. The pairing demonstrated how mature Irish whiskey can elevate delicate, savoury dishes just as effectively as richer courses.

Course 4 – Honey Spiced Cherry Valley Duck
Whiskey Roasted Peaches, Celeriac, Braised Bitter Leaves, Smoked Almond
Paired with Redbreast 21 Year Old
The main course showcased Cherry Valley duck, perfectly cooked and paired with whiskey roasted peaches, creamy celeriac, braised bitter leaves and smoked almonds. The sweetness of the peaches mirrored the tropical fruit character found within Redbreast 21 Year Old, while the whiskey’s elegant oak spice complemented the richness of the duck without overpowering it. The combination highlighted the depth and refinement that both the kitchen and distillery are known for.

Course 5 – French Toast
Wexford Strawberries, Whiskey Whipped Mascarpone
Paired with Redbreast PX Edition
Dessert provided a fitting finale to the evening. French toast, topped with fresh Wexford strawberries and whiskey whipped mascarpone, was indulgent without feeling heavy. Redbreast PX Edition, matured using Pedro Ximénez sherry casks, brought layers of raisins, figs, caramel and dried fruit that echoed the sweetness of the strawberries while enhancing the richness of the mascarpone. It was a memorable finish that left guests with one final example of the harmony between carefully considered food and exceptional Irish whiskey.

Throughout the evening, guests were invited to explore not only the flavours in each glass, but also the heritage and craftsmanship behind Redbreast Irish Whiskey. Stories of maturation, cask selection and the history of the distillery added another dimension to each pairing, creating a relaxed and engaging atmosphere around the dining room.
The collaboration highlighted a shared commitment to quality, provenance and craftsmanship, with both Pichet and Redbreast celebrating the very best of Irish hospitality. From the carefully curated menu to the guided tasting experience, Quite the Find offered guests an immersive evening that demonstrated just how seamlessly exceptional food and Irish whiskey can work together.
