On Sunday 6th April 2025, Pichet hosted an unforgettable evening as part of its acclaimed Friends of Pichet series, welcoming Michelin-starred chef Stefan McEnteer of The Bishop’s Buttery at Cashel Palace for an evening of fine dining in Dublin. The exclusive collaboration with Pichet’s Executive Head Chef Harry Quinn celebrated Irish produce, refined technique, and creative synergy between two of Ireland’s most exciting chefs.
Stefan McEnteer’s presence in the kitchen brought a remarkable level of precision, creativity, and calm. As Head Chef of the Michelin-starred Bishop’s Buttery, his reputation for balancing bold Irish ingredients with classical finesse was on full display. Each dish in the six-course menu reflected Stefan’s deep connection to the land and his ability to extract purity and depth from every element. A Night of Refined Dining and Creative Collaboration
Stefan’s six-course tasting menu was a showcase of Irish ingredients elevated through classical technique. The evening began with elegant canapé-style snacks: croustade with cured trout, dill buttermilkand Cais na Tíre gougères, followed by Stefan’s signature starter: Balfego Tuna with apple, sorrel, radish and kombu. A clean, balanced plate that plays on freshness and a balanced expression of land and sea, these opening plates were paired with Crémant de Limoux Brut Rosé and a crisp Sancerre.

The fish course featured Black Sole with Oscietra caviar, mussel, leek and vin jaune – a luxurious and precise plate, paired with a mineral-rich Bourgogne Blanc.
For the main course, Tipperary lamb with morel, wild garlic, spears of Irish asparagus and sheep’s yogurt brought a sense of spring to the plate. A spring-forward dish celebrating the depth of Irish produce — earthy, bright and precisely composed. Paired with Château Puynard Bordeaux, it was earthy, elegant and deeply satisfying.

Dessert was a playful dark chocolate and Irish cream mille-feuille, served with a smooth Milk Punch cocktail crafted by Pichet’s talented mixologist Marian Bîgu. Guests finished the evening with petit fours: a black sesame macaron and a Tipperary Single Malt Whiskey Chocolate Bonbon – a sweet and spirited finale.
